Wine Fermentation Tank

Overview

A wine fermentation tank is a vessel specifically designed for wine fermentation. Wine is beloved by the public for containing various amino acids, minerals, vitamins, and other nutrients essential to the human body. It also offers health benefits such as anti-aging properties, vascular protection, prevention of arteriosclerosis, and cholesterol reduction. Therefore, controlling wine quality through fermentation tanks is crucial. These tanks ensure optimal fermentation conditions, resulting in fully fermented wine with a delicious flavor.

 

The key control factor in wine fermentation is temperature management, achieved through jacketed designs and thermal insulation. The jacket system allows precise temperature regulation, while insulation maintains the set temperature throughout the fermentation process.

Main Components

The wine fermentation tank consists of:
  • Vessel body, head, and bottom
  • Cooling jacket
  • Essential accessories: level gauge, sampling valve, manhole, feed inlet, cloudy/clear wine outlets, residue discharge device, and internal wine circulation system

Design Features by Wine Type

  • White wine tanks: Cylindrical with a 2–5° sloped bottom for easy residue drainage.
  • Red wine tanks: Available in sloped-bottom, conical-bottom, horizontal rotating, horizontal agitated, or multi-functional designs, typically equipped with:
    • Circulation pump and pipes
    • Bottom residue discharge device
    • External circulation system (pump + pipes + internal distribution device) for spraying juice from the top back into the tank, operated 2–3 times daily for 30–60 minutes per cycle (adjustable per process needs).

Operational Process

  1. During red wine fermentation, grape must ferments inside the tank, with temperature controlled by the jacket.
  2. After juice-pomace separation, juice is pumped out first, then the scraper motor under the tank is activated to discharge pomace through the bottom outlet.
